For some very special coffees, after the drying process, a hand selection stage occurs, meaning that people check one by one the coffee beans to select only the best from the best.

This hand selection process happens in with some of our group 3 and 4 coffee origins. If you want to try them, get our custom package in green or roasted.

These tanks contain the beans after being depulped from the coffee cherries. The beans are left fermenting approximately 18 hours, then washed and dried.
