Have you ever seen pink ripe coffee beans? Well in Huila, Colombia you can find them and they actually have a floral aroma with lavender and pink grapefruit notes. Huila is a department from Colombia, it is recognized for its rich and volcanic soil due to the presence of the Nevado del Huila, being a great land for coffee production. The culture of coffee growing in Huila is well known for its Bourbon and Caturra production.
One of the most exotic Bourbon variations is the Pink Bourbon which is a hybrid between Red and Yellow Bourbon. It grows in higher altitudes at over 1,800 meters begging for resistance to leaf rust due to the altitude. Nevertheless, it’s a challenging coffee to cultivate due to its maintenance consistency of the cherry color. For instance, the Pink Bourbon trees have to be isolated in order to prevent cross-pollination and thwarted by the presence of yellow and red genes in a given pollen grain.
The taste of these Bourbon variations is unique and elegant with fruity and floral notes of peaches, grapefruit with a hint of umami, and green tea are great to amaze your taste buds.
