Why Roasters Choose Miraflores Washed

Miraflores is a strong fit for roasters looking for a step up from a standard commercial washed coffee without moving into highly experimental or expensive specialty lots.

Its dark chocolate, sugar cane and citric profile is familiar and approachable, while the higher-altitude production and quality-selection process at Los Cedros give it more structure and consistency for specialty coffee programs.

Miraflores is particularly well suited for:

  • Everyday specialty espresso
  • Milk-based drinks
  • Drip coffee
  • Premium house coffee
  • Higher-quality blends
  • Coffee brands looking for a strong origin story without moving into experimental processing
  • Roasters that want a direct relationship with a Colombian sourcing partner

Why Is This Coffee Called Miraflores?

Miraflores is the current name of our premium washed coffee sourced from the Ebéjico region of Antioquia. You may still see this coffee referred to as Ebéjico in older TCP materials or product references.

The coffee is sourced through Los Cedros, our partner buying center in Ebéjico, where coffee from local smallholder producers is evaluated, selected and prepared for our premium washed program.

How This Coffee Is Produced?

Miraflores has a washed processing method. The process begins with the harvesting of ripe coffee cherries, followed by pulping to remove the outer skin and pulp.

The coffee then undergoes a short fermentation period in water for approximately 14 to 18 hours, which helps break down and facilitate the removal of the remaining mucilage.

Finally, the coffee is dried either mechanically or naturally under the sun until the moisture content is reached between 10% to 12.5%.

How Miraflores Is Sourced?

Los Cedros uses the Colombian Coffee Growers Federation, or FNC, reference price as a benchmark when purchasing coffee from local producers. Farmers who deliver higher-quality parchment can receive additional quality premiums based on the physical quality and cup profile of their coffee.

During the 2024 harvest, coffee purchased for this sourcing program was paid at an average of approximately 13% above the applicable FNC reference price. This model is designed to reward producers for quality while maintaining a transparent pricing structure connected to the Colombian coffee market.

Roast And Brewing Recommendations

Recommended Roast:  Medium, Medium Dark and Espresso Dark

This roast range develops the coffee’s chocolate, sugar cane and acidity notes while preserving balanced sweetness and a creamy body.

Best For: Espresso, milk-based drinks, batch brew and blends.

For espresso and milk-based drinks, a medium-dark roast will emphasize body and chocolate sweetness. A medium roast will retain more acidity and highlight the sugar cane character.

Roast / ApplicationRecommendation
MediumMore acidity, sugar cane sweetness and balance
Medium-darkMore chocolate, sweetness and body
EspressoStrong fit
Milk drinksStrong fit
FilterGood fit for a balanced, approachable cup
